I usually have to put a better edge on knives when they come in, even brand new from the factory. Not my new Shun, it came to me razor sharp. I will probably never by another brand of knife ever again unless I ever some manage to afford something from the Michael Bras line

15 years and going strong
Used this knife as my main "chef" knife in the french resturant I worked in as a sous chef for over 10 years. Now using it at home, and it is still perfect. Best knife i've ever owned

Best Knife Ever!
I got this knife for my birthday last November. After 50+ years of cooking with name brand knives, the precision and performance of the SHUN is like NO OTHER. I have abandoned them all and only use this knife. Macy's had a great price, so I had to get another! A FIVE STAR performance indeed! If you love to cook, you must try this. You won't regret it!

Absolute MUST HAVE blade
Great for professional use in kitchens, MUST BE RESPECTED. Folded Japanese steel is light and RAZOR sharp. (Think 8in Samurai Sword) but not indestructible. Use on a bamboo cutting board. Hand wash and store with care. Will cut unlike any blade you e ever used and will last decades. But will chip on stone and counter top, the tip can be broken off (buddy tried to open a soda with one) basically to be used on fruit and vegetables only. But in the kitchen it's ESSENTIAL
